We invited two other families to join us for a barbeque in the garden this evening. With an extra 6 children joining us, a chocolate cake was called for. This is our favourite recipe. It comes from an old children's recipe book, and was first made by Will at Grandma's house when he was about 5. They wrote the recipe out for me between them - and I still use this old scrap of paper every time. In case you can't read it, the recipe goes like this:
Grease two 'Victoria Sponge' style round cake tins.
Preheat oven to 180 degrees
For the cake, break the chocolate into pieces and melt.
Cream butter and sugar together in large bowl.
separate egss. Beat the yolks into the butter/sugar mix. Stir in the melted chocolate and the ground almonds.
Whisk the egg whites until stiff. Fold gently into the mix, alternating with flour.
Divide mix between the two tins and bake for 20 minutes,
For icing.
Heta the evaporated milk and the sugar together in a saucepan, bringing gently to the boil, then simmering for 5 minutes till thick (stir to avoid burning). Take off the heat and stir in the chocolate and butter until both melted. Cool slightly, then use to sandwich the cakes together and to ice the top.
The cakes don't rise a lot, so it is not a very deep cake. Make double quantities to give four layers for a really impressive cake.
