I'm sure I've already mentioned that our son is vegan and how challenging I've found it - from a cook's perspective. However, I am now enjoying the fun of cooking with a vegetarian twist. I'll never be vegan, but could easily be vegetarian if I decided to go that way - which so far I haven't! I got a new cook book today though (Bish Bash Bosh - put together by two young men from Sheffield), and it has some great recipes. Tonight I'm doing a meatless Shepherd's Pie.
Wow, that's Pyaz(Onion), lehsun(Garlic) One of the most used vegetables used in Indian Cooking, Onion has many Roles, and Garlic is maily for essence.
Vegan Right, I would love to suggest you many vegan Indian Dishes, like Palak Paneer, Rajma, Chole bhature, these 3 are my favourite and i will chose them over chicken on any day(I'm not Vegan). 😂😂

Nice still life here - I would happily be vegan and/or vegetarian, as I really don't like meat, do like fish - but my daughter is dairy and gluten intolerant, doesn't like most nuts and complains when I feed her on pulses too often! I cook things like bean burgers from Jack Monroe for me and meat burgers for her, with the root veg wedges and salad or crispy kale for both of us.

I was a veggie for a long while, but Mr F could not function without some red meat........we eat chicken or fish most days and on red meat days I just have a big plate full of roasted veggies....Like the colours in your pic.

What a challenge for you Issi & more & more will be facing the same as vegan eating becomes more popular. I eat meat but could easily be vegetarian but never vegan I would think...it sounds quite a hard lifestyle. Lovely group of vegetables ready for your preparation.

I find it an exciting challenge - I have 3 vegans in my kids and partners and I just love researching new recipes online when they are coming. It's not really a hard lifestyle, the food is divine and it keeps so well! I cook many vegan meals for myself just because I love the recipes I have tried out for them :) I do not eat meat anyway, but do eat a few animal products. This is a lovely image, very nice still life :)

We've been doing more vegetarian and some vegan. I found the Instant Pot to be a huge help for improving my otherwise mundane chilis and vegetable stews. Lovely image that evokes enthusiasm for cooking.

@randystreat @peterday Yes. A bit of an oxymoron, it has to be said. But it was lovely and hubby didn't even realise he wasn't eating meat. Ground up mushrooms and lentils gave it the 'meaty' texture and lots of spices and flavourings did the rest of the job. I'd definitely make it again.

@koalagardens Totally agree - I love the challenge now, although I do find it's more time consuming in the kitchen than traditional cooking. But it's very satisfying to produce an entirely plant based meal which is tasty!

@jamibann some things are really time consuming, but you will find some things are a snap to make quickly too. I do a lot of stir fry meals that are just as fast as when I would put meat in there. how did that pie turn out?
The oxymoron titles of vegan dishes are fun - I love making eggless quiches :)

I had to smile at Peter Day’s comment because I initially thought how interesting a meatless Shepherd’s pie would be. :-) Your description of what gave it the ‘meaty’ texture sounds delicious. I would definitely love to try it. Wonderfully composed shot!
