Portugese Pudim Flan

I walked into the restaurant right by my hotel, and I knew it was exactly where I wanted to eat when I saw this tray of "pudim flan." My mother made them in little tin cups just like these, and it brought back memories of my childhood. The bottoms of the cups are filled with an almost-burnt caramel sugar sauce so when the cups are inverted onto plates, the sauce covers the whole pudding. These favorite desserts have a distinctive taste, and even now as I look at the photo, I can tell which ones I will prefer the taste of. What I'm also struck by is how internationally popular this dessert is.
