Only cheese made in a specific way with specific milk from grass-fed cows in a specific region of Italy can be labeled as such. Scale? Wikipedia reports: "The average Parmigiano-Reggiano wheel is about 18–24 cm (7–9 in) high, 40–45 cm (16–18 in) in diameter, and weighs 38 kg (84 lb)." And each is sold for over $1000. You are looking at over $66,000 of cheese. I watched someone being served a risotto that was poured into a cheese wheel with a well in the center, stirred around to get the freshest cheese melted onto the rice, and then served immediately. I want to order that dish next year in Bologna.

I was in Bologna 2 weeks ago! Did you visit the "7 churchs" (St. Stephen)?

@domenicododaro -- I was there March 31 - April 7! Do you go often? I'm there every year in the spring. Next year it will be mid March. went to the 7 churches years ago -- maybe in 2006? This year, I did no tourism. All day at the Bologna Fiera center. All posted photos were takent walking to/from dinner and back to hotel. I'll go check your Bologna photos now.

@jyokota did not post any, actually! I was there for work, as well, on 20 and on 27 March. Fun city, and the food is above average!

Mmmm, yummo, nothing like good parmigiano-reggiano on an Italian meal. There must be a fortune in cheese in this store.
