Recipe for Christmas mincemeat

Ingredients
1 large cooking apple, peeled and chopped fine
8oz veg suet
8oz currants
8oz raisins, roughly chopped
8oz sultanas, roughly chopped
4oz chopped mixed peel
4oz soft brown sugar
2 tablespoons sherry or brandy
zest and juice of one lemon
Put all ingredients in a large bowl and stir together well.
Cover bowl with clingfilm and leave for 3 to 4 days, stirring every day.
Put into jars, covering with a circle of greaseproof paper, leaving about half an inch headspace and putting on a lid or cover.
Ready to use in one or two weeks. Enjoy!

Yes, will be making some, your recipe is almost exactly the same as mine. Once tried you never go back to the bought stuff!

@tishpics I've no idea where I found this recipe originally (have had it for years) but agree it's far superior to bought mincemeat - bit like comparing packet stuffing with home made. Must do the cake this week

Nothing like homemade stuff. The only ingredient I don't know is veg suet. Can you help me? Thanks so much!!!

@anazad511 Veg suet = vegetable suet or you can also use beef suet. I just buy it in a small box in the supermarket - hope you can too!

@rosiekind As I said before, Rose, you are so kind. Many moons ago, I worked as Assistant PRO for Suffolk Constabulary. My first task each morning was to scan the national and local newspapers for items of interest, cut them out, past them up and take them to the Chief Constable. I soon found it was also a good opportunity to collect any recipes which took my fancy and I've been collecting them ever since!
