A fascinating way to cook eggs Hazel! This looks so tempting I must say! I have never cooked or been asked for eggs benedict, perhaps I should practice! I fru one in my guests eggs on the hot plate of the Aga without fat which works really well fir a healthy option. I put it on special non stick sheeting on the top & break the egg straight onto the hot plate then put the lid down.
