I understand from Carwyn that the secret is to crack each egg into its separate oiled 'nest' of clingfilm, tie up the top, and cook for four and a half minutes in simmering water.

A fascinating way to cook eggs Hazel! This looks so tempting I must say! I have never cooked or been asked for eggs benedict, perhaps I should practice! I fru one in my guests eggs on the hot plate of the Aga without fat which works really well fir a healthy option. I put it on special non stick sheeting on the top & break the egg straight onto the hot plate then put the lid down.

I like to whizz the water round very fast and drop the egg into the vortex! Mustn't let it boil though!
