Having already eaten an meal of eloquently sufficiency, which sounds better than saying, we ate & I'm stuffed, I am wondering if my eye's are too big for my stomach as your delicious looking potatoes are making my mouth water.

Parboil them first for about 5 mins. Usually I roast them in veg oil or light olive oil but feeling renegade last night and used the fat from Sunday's lamb roast - very unhealthy I believe!!!
