I believe this is “Alpinia zerumbet,” a member of the [very large] ginger family (“Zingiberaceae”).

@espyetta Thanks, MaryBeth, and you're exactly right: the other things that look like [peeled] cloves of garlic are as-yet-unopened flowers! Perhaps this week this shoot will be just stunning!
