Shrimp Fettuccine with Spinach & Parmesan

I tried out this awesome and simple recipe from Cooking Lights: Shrimp Fettuccine with Spinach and Parmesan. This was so easy to cook and so fast. It was light and flavorful (oil and butter base, not a heavy cream sauce) and perfect with a salad with an oil/vinegar dressing. We also had olive oil bread with these locally-sourced olive oil and balsamic dips we got in California. This recipe is making it into my regular rotation for sure!
