I spent much of Thursday making these four layer chocolate cakes. After this step, I ice the outside of the cake with more chocolate mousse, freeze them, and then cover the whole thing in chocolate ganache. I only had to make 9 of them this time, but it felt like it took an eternity. The cake is delicate, so I can only do two a at a time while the others are in the freezer; otherwise, they start falling apart when I ice the outsides, and I have a hard time making them the right shape.
What a great angle from which you shot this image -- really shows off the layers nicely! Your description is making me think that @taffy and I might need a trip to Seattle to taste these layers of chocolate!
