Today I baked 24 sheets of chocolate ladyfinger cake for yule logs, 10 chocolate cakes, and 15 sheets of white chiffon cake. Now I just have to put them all together and make them pretty.
@francoise I soak the cake in Triple Sec syrup, fill them with vanilla mousse, roll them up, and then freeze them. They keep for quite a long time that way. I have a big order coming up for 1,800 four inch logs. If I don't start now, I'll never have enough time to make them all. I'm hoping to have all the rolls frozen by the time the official order comes in, then I'll just have to cut them to size, dip them in ganache, and decorate them.
