Today I used the last of my courgettes and a big bowl of my home-grown cooking tomatoes, along with aubergines, peppers and onions which I bought, and made a huge pan of ratatouille. We'll eat some of it tonight and I'll freeze the rest.
A colourful presentation! And how wonderful to be able to use your home-grown courgettes (we know them as zucchini) and tomatoes. They will make your ratatouille even more delicious!
