Last week I bought 5 mini eggplants for purple as their color was perfect for today!
Guess what we will be eating tonight... right, something with eggplant, but I'm not sure what yet.
Oh and if you look really carefully you can see a little blue in the droplets from yesterday...
broil or grill it, remove the skin, mash it in scrambled egg (ground beef optional) then fry or bake until done. or boil it, mash it with vinegar, pepper and garlic. now i'm hungry, i just asked my niece to make both of them for me. aces on the comp, ingrid. aces!

They have now been eaten in a Moussaka. Yelena doesn't like eggplant, so in the corner of the dish, I replace them with zucchini for her.
I love it and sometimes I just grill it with a little oil, salt and pepper on top for my lunch :)
