Divorced Eggs Benedict

We ate some delicious breakfasts on the beach every morning in Tulum, but this one was my favorite. And I created it: after having eggs benedict the day before. I asked Emilio to hold the hollandaise and substitute freshly made green and red chile sauce instead. Emilio now calls this dish "Divorced Eggs Benedict". Served with a side of hash browns and a tomato garnish, it truly is muy bueno!!

Tulum is still very laid back, there is a "hotel zone" of small cabana-style hotels, very little infrastructure and no major hotels at all! It is still very much the way it used to be!
