Divorced Eggs Benedict

We ate some delicious breakfasts on the beach every morning in Tulum, but this one was my favorite. And I created it: after having eggs benedict the day before. I asked Emilio to hold the hollandaise and substitute freshly made green and red chile sauce instead. Emilio now calls this dish "Divorced Eggs Benedict". Served with a side of hash browns and a tomato garnish, it truly is muy bueno!!

That is the most appealing food shot, Danny. The colors really pop off the page, and it also sounds delicious. Great addition to the restaurant's menu, and an interesting name as well.

OMG, THAT LOOKS AMAZING.. I WAS IN TULUM YEARS AND YEARS AGO, WHEN THERE WAS NOTHING BUT JUNGLE AND TULUM. I SUPPOSE NOW THEY HAVE DEVELOPED IT AND PUT A MAJOR HOTEL THERE????

This was the most delicious breakfast, I ate it almost every day! @shirljess Thanks, Shirley. Tulum is still very laid back, there is a "hotel zone" of small cabana-style hotels, very little infrastructure and no major hotels at all! It is still very much the way it used to be!
