A couple of years ago I did a small collage of the steps to making meringues http://365project.org/Weezilou/365/2011-09-10, and after making them all summer for friends, and again this past weekend for the photographers of 365 whom I met at the Mission, here's the set-up. I left the directions for Joy @joysfocus with the photo she took of Ken and me. Her photography and processing are amazing, so you should check out her pictures if you haven't already. The secret is only to invest in a Wilton 18" piping bag (Michael's) and the biggest plain or serrated tip you can get... You'll find it SO EASY to please your friends, though they'll keep coming back for more!
Wonderful collage Louise! Your meringues are the best in the world!. They are so heavenly and light. They just melt in your mouth. I don't have a high tech professional mixer like that but I'll see what kind of magic I can do with mine.
@joysfocus Whipping is whipping...just get that meringue stiff, and that's why I showed the photos... Set the eggs out overnight or longer so you're working with room temp whites...that should also help (though I've done it both ways and in every sort of weather...)

@anazad511 Are meringues "religious goodies"? I did make them religiously all summer for my friends! Then we had them at Christmas, and now that it's Valentine's, I added some food color and am still using the Christmas peppermint candy! Thanks for the kind words...I wish I could make a food display look a fraction good as yours!

Oh Louise, these look so yummy! I love meringues but lack the patience to make them. Seeing the process of you making them makes a great collage. Enjoy one for me!

Wow, look at that! I have never attempted to make meringue cookies, tried lemon meringue pie a couple of times, too much work, and these look fabulous!! Again, so sorry I missed this get together....let's have another one before you leave for Lunenberg!!
