Well *thank you* Joy! I like how you processed this picture! There's no secret to making the meringues...they're easier to make and faster than a batch of cookies! http://365project.org/Weezilou/365/2011-09-10 Here's the set up...
For ease, Get an 18" reusable Wilton piping tube and the largest Wilton tip you can find (Michael's has a good selection) Tip must be round and plain or serrated.
4 egg whites at room temp (DO NOT USE if the yoke breaks; they won't set up)
Start beating them and add "a dash of salt" and 1/2 t Cream of Tarter
Set the beater to whip faster & very slowly, add 1 C sugar
When the meringue is very stiff, add 1 t Vanilla (and food color if you wish)
Pipe them onto (a teflon sheet) (parchment paper) or a (brown paper grocery sack)
Sprinkle with crushed peppermint or silver candy balls (or leave plain)
Bake in 250 degree oven for 65 minutes ... turn off oven & leave in for 10 more minutes ... set out for 10 minutes to cool & put into an airtight container. (Left out, they will get gummy in a few hours. In a good container, they will last...*could last*... for a couple of months..)
I got over 100 meringues on 2 cookie sheets, both of which I set in one oven at the same time.
