I have been looking forward to today - this is day one of a two-day baking class at Aurion.
Aurion is a mill and bakery that specializes in biodynamic and organic four, grain, bread and various other related products, and it's placed only 50 kilometers up North from where I live.
The mill and bakery is very well known here in Denmark for having reintroduced some of the heritage grains here in Denmark. It was founded in 1980 by the owners Jørn Ussing and his lovely wife Inger, and they are both well known for their passionate and dedicated work and high end quality products.
I'm absolutely thrilled to be able to join them for a two day baking class - for an aspiring baking nerd like me theres just no better way of spending the weekend :-).
Today's shot is the flour scooper in one of the giant flour containers in the bakery - these scoopers are really big and can easily hold well over 2 kilos of flour. The flour btw is the very aromatic whole-grain Öland wheat, which is one of the prized heritage grains in Denmark - and one of my favorite grains/flours.
