There are obviously a ton of excellent books out there that cover this subject, but one of my favorites is called "Exposure and Lighting for Digital Photographers."
Don't let the title fool you, the same rules apply to film photography just as they do with digital, but the book not only covers what makes a good photo, but it covers some of the topics that do pertain to digital.

But I just started reading Bryan Peterson`s "Understanding Exposure". I`ve only gone through the first 20 pages or so,but I totally recommend it.
There are quite a few good books which have been recommended. My only comment is to add that almost any book has to be better than the manual. Yeah, I know it's important to know what all the buttons and settings are for but the manual I found particularly difficult if I wanted to actually learn anything about photography.
