I read a tip a while back for photographing slices of fruit on a window, the sunlight is then your backlight.
Attach some white paper to the OUTSIDE of the window. Slice some fruit ( lemons, oranges, kiwi etc., ) with a straight edged knife for a smooth slice. Some icing sugar on the back of the fruit will help it stick to the window and off you go.

@jdonnelly Hi Joseph, After leaving a comment I rememered a photographer that gave a talk at my camera club some time ago, and he had some images from 2007, and what he did was placed flowers in shallow bowls of water and froze them and then placed them in front of a window and caught the natural light coming in from behind. Maybe try it with the fruit?? anyway thought you might want to take a look.
