I have complained before how much I hate that I can no longer eat fruits and vegetables that are not pureed. I have recently started making vegetable stock that is clear. I have to strain it. Sometimes I cook my ramen noodles in it and other times I drink like a tea. Here I have mixed a package of Gerber baby food carrots. It was yummy and partially satisfied my yen for veggies.
That has got to be hard and no wonder you have a yearning for carrots. We’re supposed to have at least 7 1/2 cup servings of fruits and veg a day. Is this a temporary thing? I hope so.
I know how hard you work to keep your digestion in working order but you always manage to find creative ways to accomplish that. Being AIP now is challenging me to do the same! Although I would not call myself a vegan, I'm sure glad for so many vegan alternatives now for dairy that I can't have on AIP. Makes me think it's a long term solution even when I don't have to be so strict. Keep on puree-ing!
"Going without" would be so difficult! I make a chicken stock with leftover bones and vegetables...then strain the broth. In my case, I can eat the veggies, so I puree them and freeze them as cubes to add to to my "broth tea"!
@Weezilou I could attempt to puree them also but they look so washed out I haven't. All that is left is the fiber which is what I try to avoid. 20 hours in a crock pot does them in.
