It's Saturday! This is an interesting Spanish roasted vegetable dish I am planning for tomorrow.

Lovely clean shot on the white backdrop..........hmm, unusual with potato can't guess the end result....I love them roasted and stirred into cous cous and pickled lemon!!

@fannyb Fanny, it's a Rick Stein take on a traditional Spanish dish. As usual with Rick Stein, it involves 193 million different processes so I always end up thinking it was never worth all that work, but the family seem to like it!

@joluise Jo, it's "Mediterranean Escapes", and the dish is called "tumbet". I've tried quite a few of the recipes from this book and they are all very good (but hard work!!!).
