Now I'm not a fan of beets, but I am a fan of roasted vegetables. I've eaten several vegetables that I didn't care for after they've been roasted and they turned out delicious. So I figured I'd try beets this way. Very good and I will make this again!

That sounds really good. I love beets- hate peeling them! However, I just can't bring myself to settle for the canned ones. This might make me think twice about the peeling issue! Looks delicious.

I don't hate beets but avoided them when I had an opportunity to do so. These were actually good. Perhaps it's the honey. @grammyn OK, I'll try to remember to do that. @olivetreeann Peeling the raw beets was no worse than peeling the carrots. I did have rubber gloves on when I did it, but there wasn't a whole lot of red liquid around. They were good. @shutterbug49 It does. My last discovery was roasted radishes. I really do not like radishes, but roasted...delicious. @kjarn I like these together and saw some recipes for sweet potatoes and beets on Pinterest. That might be good too. @jamibann It was. @pusspup Roasted (cold) beets in the salad? Not sure what rocket it. I believe it's a type of lettuce, perhaps with a peppery bite? @wakelys Not earthy after I roasted them. @bkbinthecity Yes it was. @rensala Oh my, so sorry.
