Cognac is distilled from a wine made from, largely, Ugni-Blanc grapes, but also Colombard et Folle Blanche. The wine before distillation is bitter and undrinkable: The finished product, after maturing for at least 10 years in oak casks is exactly the opposite! I don't know what grape variety these vines are but they will be one of the three mentioned.
