The Queen Victoria Agave will wait 30-50 years before blooming. After it blooms, the plant dies. There is no way to stop it from happening once it starts, ie: cutting off the bloom stalk will not keep the plant alive. This agave is native to Mexico. And, yes, it looks like an artichoke.
