Sweet Treat

It's Wednesday, shopping comes on a Thursday, the cupboards are bare and I really fancy a sweet treat. Cookie comes home from school and I ask him to go across the road for me but he's having issues with his leg joints and he needs to sit down and rest. So I look in the cupboard and think about making a cake.

Oh no, the self-raising flour has a BBF date of May 2017. Hmmm. So I google 'what dessert can you make with plain flour' and the first thing that comes up is 'cookies'. Yay. I can do those.

Ingrediants
225g (8oz) butter, softened
110g (4oz) Caster sugar
275g (10oz) Plain flour
75g Plain chocolate

Method
Preheat the oven at 170oC (375oF) or gas mark 3.
Cream the butter in a large bowl or in a food mixer until it is soft. Add the sugar and beat until the mixture is light and fluffy.
Sift the flour into the mixture and add optional ingredients. Bring the mixture together in a figure of eight until it forms a dough.
Using your hands, make walnut sized balls and place them slightly apart from eachother on a tray (You don't need to grease or line a tray). Flatten the balls with the back of a fork and bake them in the oven for around 15 mins until they are golden brown and slightly firm on top.
Place the cookies onto a cooling rack and leave them there for around 15 mins. Once cool serve.

I'm not really a baker but I decided to add a bit of baking powder to give them a bit of air. Not sure if this was necessary or not but the finished product wasn't really cookie-like but tasted more like light shortbread biscuits with chocolate chunks in it. Yummeeee. My eldest loved them. Little L threw his away and hubby complimented them as well. Not bad I say.
