Last week I posted a photo of some cookies I had made and ended up adding a link for the recipe. Other 365's loved the idea, so I thought I would start a topic on it. If you are like me you never try a new recipe unless you have a photo to look at :) So, here is the picture of my Gooey Butter cake Cookies, and the recipe I used to make them.
Ingredients
1 (8 ounce) package cream cheese
1/2 cup butter, softened
1 egg
1/4 teaspoon vanilla extract
1 (18.25 ounce) package yellow cake mix
1/4 cup confectioners' sugar
Directions
1.Preheat oven to 350 degrees F (175 degrees C).
2.In a medium bowl, cream together the cream cheese and butter. Stir in the egg and vanilla. Add cake mix, and stir until well blended. Roll into 1inch balls and roll the balls in the confectioners' sugar. Place 1 inch apart onto an ungreased cookie sheet.
3.Bake for 10 to 13 minutes in the preheated oven. Remove from baking sheets to cool on wire racks.
Here's one from my project back in February. It's my homemade salsa and there's a link to the recipe on the photo page. It's so good I literally make it about once a week. It's a fairly healthy snack and it goes with a lot of Mexican style foods.
I'm a massive foodie and often end up taking photos of food that I've made/scoffed! These are spinach and ricotta pancakes, cooked cannelloni style and are really simple.
1 large onion , halved and sliced
butter
1 garlic clove , crushed
1 bag spinach , about 250g, washed
1 x 250g tub ricotta
1 lemon , zested
50g Parmesan, grated
8 ready-made pancakes (we made them ourselves)
350g jar good-quality tomato pasta sauce (we made this ourselves too)
- Make the pancakes
- Cook the garlic and spinach in the butter
- Mix up the ricotta, lemon zest and half the Parmesan
- Divide ricotta mixture between the pancakes and roll each one up to form tube
- spread 1/3 tomato sauce on a baking dish, lie the rolled pancakes in the dish then pour over the rest of the sauce and cheese.
@kirsty1975 You are making me so jealous! The one time I've been to London I splurged and bought a few goodies from Thornton's and after I devoured them I wish I'd stocked up on more.

Not really a recipe..Buy pastry, buy mincemeat, Put the two together!
