i'll put my self out on a limb. i am in no way an expert but............all i do is put my camera to the tv setting on the little dial and then play around with the adjustments on their.not very technical eh? you could also try finding nice sunset pictures on 365 and then clicking on the "details" tab down on the right hand side and this will tell you what setting's they used for there picture. : )

Shoot in RAW and then underexpose the sky in Photoshop or whatever you use to edit

I have a cnon eos400d which i believe is pretty much the same as the xs or the xti but i mostly shoot in av mode ( because of the light changing so rapidly i dont need to worry about chnging the shutter speed on every click) and i generally have the f-stop set at about 5.6 (or up to 8)
if its still giving you a boring looking sky to what your actually seeing, change mode to manual and play with under exposing your speed to get a bit more colour from the sky.

hope that helps some

Increasing the shutter speed will make the sky darker but also the horizon. Experimenting with HDR may be a good option if you have issues getting it just right.
In photoshop I darken the highlights as well, it makes a big difference.
