Vidalias are a sweet yellow onion; they must be grown in soil sandy enough to let sulfur wash through to the clay below --which requires a good bit of rain. They must also be grown at the correct latitude: Vidalia seed will only mature during winter at a latitude where the short days are also mild.
We enjoy being able to buy Vidalias at this time of year, and enjoy them in store-bought bottled vinaigrette the rest of the year!
