DOF = Depth of Field. It is about how much of your image is in focus both behind and in front of your subject. Shallow DOF means most everything other than your subject, or point of focus, is blurred, making your subject stand out from the background (and foreground) of the scene. When someone says "nice DOF" they are usually referring to your clever use of shallow DOF. HTH! :)
