Quick jam making lesson, I use small strawberries very sligtly under ripe (more pectin in under ripe fruit) I put the strawberries into a bowl and gently stir through the sugar then I cover them and leave them out overnight. Next day into the preserving pan with the juice of a lemon and heat very gently until sugar is melted. Then boil rapidly till 105c on sugar themometer. Macerating the strawberries means the sugar dissolves easier so when you boil them it takes less time, the strawberries stay whole and the flavour is better.
