Kat's Birthday Cake - "Ginger Fluff Cake"

Katrina celebrated her 40th Birthday on 11th July.
We helped her celebrate last weekend with a "Ginger Fluff Cake".
Not a great job of joining it, but it still tasted awesome.
Here is the Recipe :) I am very generous with my flavour measurements.

Ginger Fluff Cake

4 eggs
1/2 cup caster sugar
1/3 cup cornflour
2 tablespoons plain flour
2 teas ginger
2 teas cinnamon
2 teas cocoa
2 teas baking powder
2 tablespoons golden syrup.
Separate the eggs. Beat whites firmly, gradually add sugar, beating well after each addition to dissolve sugar thoroughly. Add yolks all at once, beat only until colour is mixed through. Add syrup.
sift dry ingredients at least 4 times to combine thoroughly. Sift onto egg mixture, fold through gently until colour is even & dry ingredients are mixed in. Pour into 2 greased & lined deep 20cm (8") sandwich tins.
Bake in moderate oven approx 15-20 mins or until elastic to touch & shrinking slightly from sides of the tins. Turn cake onto cooler. When cold, join together with fresh whipped cream.

Happy Birthday Kat!! Lois, thanks so much fir the recipe! I'll print them together with the picture and will send something your way when I make one! Looks quite decadent! I have a lot of friends up here who would LOVE that...I say, because I'd obviously need to share it!!
