Grandma's Lemon Pudding

The May word was Lime and this would probably work just as well with limes


Living in Del Norte county has given me many surprises over the years, but one of the best kept secrets is that if you make enough friends you get things like boxes of tree ripened persimmons or lemons grown right here in the county. Had to bake this today just for a local photo challenge about "steps"

Kind of cake/soufflé and yes easy
Preheat oven to 350 and put an 8x8 pan in a larger pan, so you can pour boiling water in the outer pan for a water bath

Grate the zest and squeeze the juice from enough lemons to have 1/2 cup juice

Separate 3 eggs, whisk together yolks, lemon juice and zest, and 1 1/3 cup milk

Add 1/2 cup sugar and 1/4 cup flour and dash of salt

Beat egg whites and 1/4 cup sugar until stiff peaks form, fold into the lemon mix and bake about 45 minutes, cool a bit but eat warm, best to eat all the first day.
The best! I wish I could see a bigger picture of it - I love that pudding!

@alia_801 this has no crust and the meringue is folded into the pudding instead of separate.
