A Whole Lotta Cake

This is what my day looked like. Cake cake cake cake cake!!

These are also for the Stadium. In the end it's a six layer carrot cake with each layer brushed with bourbon syrup, and iced with vanilla-orange cream cheese frosting. That's a lot of layers of frosting. I finish them with more of the frosting and some toasted coconut on the sides. I never in my life though I'd be able to cut such thin layers of cake, but there you go. I also did a whole bunch of chocolate mousse cakes, but the carrot dominated much of my day.
Wow, this takes me back to working in the production kitchens at a four star hotel here. We would cater for up to 1800 people at a time!

My absolute favorite cake in the world, and the way you prepare it is inspiring! I always think of the cake as holding up the cream cheese frosting, so my husband who makes delicious ones serves my slice with a dollop of frosting on the slice as well as between the three layers. But six lays? Heavenly layers of cream cheese. And your slices look beautifully think and even! Amazingly done!
