First Pan Done...

...sixty-four to go. I had to make 1,800 small eclairs this week. This is what the pâte à choux batter looks like after I pipe it onto the pan. When I put them into a hot oven they puff up and have a nice hollow center. Perfect for filling with a creamy mousse. I wonder if the person buying these knows I make each one by hand.
Every time I make choux (only for home), I do not believe it's going to puff...just doesn't seem possible with such a wet batter.
