Goya

Goya, also called bitter melon is one of my favorite vegetables I am going to miss it as I am going back to Wellington today. A recent study reported it’s highly antioxidant quality and associated it with the longevity of some Japanese living on a remote island. I stir-fried it with chilli, oyster sauce and beef. Bon appétit and “see” you in New Zealand.
This is a great food shot -- the in-the-bowl and fresh out-of-the-bowl contrasts were brilliant!

I love the brilliant glossy green of the melon. It looks really good I can almost taste it! Hope you have a safe flight back.

Looks yummy. It does look like peppers. Can you get this in Wellington. This is one of the things I find hard is not finding some favorite foods from Canada - like Kraft dinner, graham crackers.

Very cool and colorful looking dish. We cook bitter melon regularly. I add different spices to reduce bitterness in it. It is also known for regulating blood sugar levels, don't know if it's proven or not though.

@ikamera You are so lucky to have access to it. If you take away the soft part in the middle, it is not that bitter. I don’t know if it can regulate blood sugar levels. But I believe mind over matters. So if you believe it, it will work.
