I do love making borscht! Recipes vary but this one is a lovely rich and healthy soup for the Autumn, packed with fresh beetroot, potato, apple, carrot, celery, onion and a nice beef stock with some fresh dill and natural live yoghurt to serve. A favourite lunchtime treat for me at this time of year.
@kjarn My son won't eat soup, but he will eat this kind of soup because it is more like a casserole or stew. I leave everything chunky and not blended.
@casablanca oh you guessed?! I went to lunch and a friend had made beetroot and orange soup. I'm sure I told told her it is a food I just cannot swallow! It was like slurping liquid soil.
@30pics4jackiesdiamond LOL! I am like that with custard, trifle, banana anything, almond flavour such as bakewell tarts..... seems beetroot is a bit of a Marmite on here. People love it or hate it!
That looks full of goodness & iron Casa. I’m a rubbish soup maker & I think come cold winter days a bowl of soup would be great but we don’t seem to have soup very often for some reason. I imagine it’s very satisfying to make too….not just my fault Harry is a fussy soup eater. Harry doesn’t like blended, he would turn his nose up at pumpkin, borscht in fact anything but veg or chicken.
