I know I've posted a similar shot before but the fog caught my eye as we traveled back from town after getting our booster shots. I've been MIA since I had a STRONG reaction to the booster. Finally back to 90% of normal.

I could share the recipe but it was quite fiddly. I will try and simplify it. Basically cook 6 apples with juice & zest of 1/2 lemon, 90 ml water, 100g brown sgr, and 1 tbsp cornflour until apples are beginning to soften, 8 - 10 mins. Add 225g blueberries (or mixed soft fruit) cook for 2 mins, leave to cool. For pastry, mix in food processor 400g plain flour, 1 tsp ground ginger & 100g g soft br. sgr. Add 200g cubed chilled butter and pulse into breadcrumbs. Add 2 egg yolks and 2 tbsp cold water, pulse till it becomes a dough, adding more water if necessary. Wrap and chill 30 mins. Roll out and use 3/4 to line a 40 x 25cm tin. Fill with cooled fruit. Cut remaining pastry into strips, to make a lattice. Brush with egg white and sprinkle with demerara sgr. Chill again and bake at 190C 25 mins until browned. Enjoy 😉
