@kjarn @sangwann Bakers here in the States use it to fold butter into flour and sugar for certain pastries and pie crusts.

My mother has one in the UK, which I have used. I use a fork if my hands are hot to start pastry off, rather than make a sticky mess

You had me going for a sec. Thought you had bent the prongs on a fork. I will try to remember to use mine. It would get more use for egg salad than pastry.
