@summerfield All I had was canned mushrooms. I don't like raw but will buy them on occasion to cook. The breakfast lasted me until late afternoon. Thanks Vikki.

Interesting comments on mushrooms! I do like to cook mine fresh. Sometimes we'll put them in a salad. I will use the canned ones if I have to. Either way I do like them in an omelette! We usually add spinach and parm. or mozz. cheese. This looks good- I'll have to try it sometime. Good shot!

@olivetreeann I used cheddar cheese. I had grated some for another meal and don't like to keep it too long. Since I've not been running to the grocery store every other day, the canned mushrooms work. I understand and believe the fresh ones taste better. They just don't keep too well. Thanks Ann.
