Fermentation Science Institute

Today we attended a talk about fermentation and toured the university’s “Fermentation Science Institute.” While this is a vat for brewing beer, “fermenting” is relevant for many more familiar products than just beer. A wonderful introduction from Director Matt McCarroll. The vat does not belong to the University, but the University has entered into an agreement with Ravinia Brewing Company of Chicago to brew a beer (“Dawg Pound Porter”*) at this campus facility.
