Well on Boxing Day my photo was of our alternative dessert and as I'm going to make another tonight for Monday evening I just took a shot of the page in my recipe book! There are a few variations on Chocolate Log recipes in different books but I like this one.
I didn't have dried cherries but the dried cranberries were great and I soaked them in Drambuie rather than whisky. I'll add the recipe below so you can refer to it if you want to have a go!
Three good things
1. A lazy morning - stayed in bed listening to the radio for ages....and I mean ages!!!! But life has been very busy for so long.
2. Food Shopping with Allan and a nice coffee stop afterwards.
3. Washed my car......not something I do often but it looks so much better! Now ready to drive into 2019!
Preheat oven to 180, Gas 4
Grease and line swiss roll tin with greaseproof paper.
Soak berries with whisky/Drambuie overnight.
Melt chocolate in bowl over pan of hot water.
In another bowl whisk egg yolks and sugar until light and creamy. Fold in cooled chocolate.
In another bowl whisk egg whites until stiff. Fold a tablespoon of beaten egg white into chocolate mixture - this helps to lighten the mixture.
Fold in the remaining egg white.
Spoon into prepared tin and spread evenly.
Bake for about 20minutes until firm to touch.
When cool beat double cream, fold in cranberries in Drambuie and spread over the chocolate sponge....with greaseproof paper removed!! Rolling is a little tricky the very first time but have a look online and there are lots of tips!
