Yup, my pre-hurricane preparations involved some emergency baking. I couldn't bear the thought of going days without getting to eat some freshly baked goods. Worried that the power might go out I rushed to the kitchen this morning to bake these goodies to help me weather the storm. These are peanut butter brownie cups: oversized brownies with chocolate and peanut butter chips baked in a cupcake pan topped with chocolate ganache and peanut butter frosting. So no need to worry about me as the storm approaches because, as you can see, I'm all set.
