We had an afternoon tea for Mental Health week at work today. I did a lot of baking for it, but it was worthwhile.
One of the staff members who came said she had just 'popped in for a cuppa' as she was vegan and so didn't expect there to be anything to eat. She was very excited to find out that more than half the snacks on the table were vegan - including the two types of cupcakes :)
(Almost everyone else complimented me about them too!)
This is one of the gingerbread ones - before they all got eaten! (I also made chocolate velveteen).
I think we could make an excellent couple, you and me - you bake, I eat. This looks delicious. My son is a psychiatrist - don't know if we have that here, at least he didn't say anything about it.
Just because it's vegan, that doesn't mean it can't taste good! Right?! They look good and I'll have to check that link out some time. I'm not vegan, but I'd like a better balance in what I cook. So, yum! on your cupcakes!
