This was my first pomegranate recipe from Yotam Ottolenghi - Plenty. Its a gorgeous recipe. I don't tend to use celery these days - Sherry vinegar is really delicious - but you could use a balsamic (maybe add a pinch of sugar if you do as Sherry vinegar is a little sweeter). I don't eat meat so it is wonderful by itself (I can easily sit and devour the whole bowl!) or with an oven baked/ poached salmon.
