We are slowly eating our way through our pumpkin crop, and the cooler weather has meant it was time for pumpkin soup - a family favourite. I'm told that it's not a common meal in other parts of teh world but pumpkins make a delicious soup - I fry an onion in a little oil, add about 1/3 of a pumpkin (peeled and diced) and a small potato (peeled and diced) along with a cup of chicken stock and a teaspoon of curry powder. Simmer until the veges are cooked and mushy, then blend to a smooth consistency and serve with croutons and toast.
YUM!
