Google Natural Light Portraits and have a look at some of the articles, watch some Youtubes etc. Lighting is really important, but you can get great results with sunlight if you've got a large window or else outdoors with the right shade.

I like to go the candid route. Ask them to be as natural as possible, maybe even ignore that you're there. Of course, there are those shots where you'll need to direct them. And like everyone seems to be saying, lighting is key. I love the light at the end of the day for the kind of shoot I think you're referring to. Don't be afraid to take full advantage of them not knowing you're shooting.......sometimes that's the best of the best when you review your shots later.
