Did you ever grab your camera and zoom in on something so far away you weren't quite sure what you would get? Then when you looked at it later, you were really surprised. Here is my picture that took me by surprise. I thought I was sneaking up on some birds at the feeder.
All the time. Take a look at my project. Every one of those photos is a surprise, since I can't look at the subjects when I'm photographing them, and often the final photo is a small crop of the original.
