SLR = Single Lens Reflex. When you look through the viewfinder you are looking through the actual taking lens. Normally has interchangeable lens. i.e. you can put different lens on the body. Does this help?
Shannon - yours is not - it's one of the Finepix range and people have had the most amazing pictures out of them. Iit's often called a bridge camera because it's a bridge between the SLR cameras and the point and shoot
Do you mean the ISO setting? it's like putting a more or less sensitive film in - high ISO means you can get images in poor light with less detail, makes for grainy / noisy pictures - low ISO means more detail but you need a big aperture / long exposure - and that can lead to camera shake. Shooting in poor light conditions is a balancing act between the ISO level and exposure time, plus aperture http://www.fujifilm.eu/uk/products/digital-cameras/bridge/model/finepix-s2950/features/
I am not an expert, I'm using a point and shoot, but I've read the discussions and there are some around on most topics if you look. This one is on ISO - http://365project.org/discuss/tips-n-tricks/11951/iso-causing-my-problems - the search box on the top right works for the discussion threads.
Hi Shannon, I have a Finepix S4000 and some of the settings are a little bit limiting, but you can still control things like the ISO so you can (i think) take some alright pictures ;-)

If you look through the lens (via a mirror) rather than a viewfinder and the lens is interchangeable then its an SLR.
Some Sony Cameras are now SLT, with an EVF and reflective fabric. a close cousin to the SLR.
Or maybe not, I'll let you decide
