Photoshop is a hard program to learn and be proficient at. I use aperture 3 since I have a mac, but it is about the same level of difficulty. I would say if you are doing the 365 day project keep trying photoshop and each day try to learn something specific such as white balance or sharpening. Youtube is your friend and if you succeed at learning photoshop you will be much happier with your photos!!!
Photoscape and Picnik free versions! ( or paid .. but I havent' done that yet ) are verrrrrrry easy to use and I like the results! Good luck on your search!
paint shop pro ! u can get a free 30 day download trial of paint shop pro (x3 is the best version) .... 4 years ago i started using it and it didnt baffle me the way many others had in the past :)
picasa is free. The only time I used Picnik, my home computer went haywire and so I will just stick with that. I have JASC paint shop pro at work, and am learning that.
I agree with @flamez. I use Paint Shop pro and for the most part I love it! With any editing program though remember you can always undo something that doesn't work and try again. There are many tutorials online that are easy to follow.
@lindib check out my albums...I remix almost exclusively with picnik...will give you a sense of what I pull off with a simple editing program and imagination
Ignore the full version of photoshop - it just has too mant bells & whistles.
Go for photoshop elements as it has everything you'll ever need (and possibly a bit more) but in a nice user friendly interface. It also has fully automatic modes, so you can start off with one click to adjust your photos & progress from there as you gain the confidence.

Have 1 question though. I seem to be losing all the info of the pic i.e date taken, camera model and the rest of the exif info. Would you know why?
@sheetalthakker pixlr is still doing everything to cater the demands of its million users, one of which, to preserve the exif info of photos. Pixlr doesn't have the "SAVE AS" option yet, we can only save our edited photos using the 'save' option. The "save" option in pixlr is actually the “Save For Web” option of Photoshop Elements 6 which strip EXIF data.
I haven't tried much of fotoflexer.com but its fairly simple too.
