Pumpkin Whoopies

Some of you know that I write a weekly food/recipe column. Even though I don't usually post work photos here, I didn't have time for much else today. My recipe this week was for pumpkin whoopie pies. The kids loved them.
I bet they did! Lovely photo! Looks like a type of gem mixture and walnut and cream cheese filling?

@maggiemae They are soft pumpkin cookies, filled with cream cheese frosting and rolled in pecans.

@peterdegraaff I have a weekly recipe column of original recipes and then I also write restaurant and play reviews and feature stories about books, art, entertainment, health, home & family and food. I write 5 to 7 stories a week this time of year and closer to 10 a week in the summer.

@lorihiro These ones took some time because I used a fresh sugar pumpkin. First I roasted the pumpkin for about 45 minutes. Then I baked soft pumpkin cookies using the pumpkin puree and when they cooled I made the frosting. So, not hard, but a bit of a time.

@lorihiro That's the dream, LH! I've been writing a weekly food/recipe column for a few years now and taking all my own photos. My editors are pushing me to submit it, but I've been so busy. Someday...

These look good! I bake sugar pumpkins and make pumpkin pie for Thanksgiving every year. The best!

Whoopies haven't quite taken off in Australia the way macarons have. Having said that, you can buy non-stick whoopie baking trays. I have a macaron one which I'm yet to christen.

ooh these look good - I love pumkin - don't get to eat it much tho! don't think i've ever had a whoopie, let alone a pumpkin one!
